Are there like, days of the week that a certain deity would rule? For example, Sunday would be Ra (I’m just using this as an example), Monday would be Min, etc. ??

There may be way too many deities to give each deity a day of the week, unless you do groups. But if you have seven deities that you work with most often I don’t see any problem with starting a weekly calendar for yourself. Or even do it by lunar phase or season…

If you’re looking for something historical, you want to look into temple Chronokraters/Chronocraters. (Which is lit. translated as timelords – *doctor who theme music plays vaguely in the background). Basically each temple would give each day of the year to a specific god/aspect of one god, the attributes and epithets of the chronocraters would be similar to festivals and other events that the temple was celebrating. To my knowledge each temple had a different 365 day calendar of deities which ruled over each day of the year.
